Battle of Brownies – Passover edition

From “ A Cook’s Tour of Shalom” Temple Shalom Sisterhood, Dallas, TX
2 eggs
½ cup oil
1 cup sugar
1 Tbsp. coffee
¼ tsp
salt
½ cup matzo cake meal
1/3 cup cocoa
½ cup nuts
Beat eggs and sugar. Blend in salt, cocoa, and oil. Stir in coffee and cake meal. Pour into
greased 7” X 12” pan. Sprinkle with nuts. Bake at 325 degrees for 25 minutes.
Variation: Omit coffee. U
se ¼ cup cocoa. Ice while warm with a chocolate icing.

1cup Passover cake meal
1 cup chopped pecans or walnuts
4 eggs
2 t
sp vanilla
2 cups sugar
pinch of salt
2/3 cup cocoa
2 sticks margarine (1 cup)
Melt margarine, mix with sugar and eggs and beat with mixture until thick and lemon
colored. Sift dry ingredients, add to egg mixture. Add chopped nuts and vanilla. Mix
well.
Pour in greased 9” X 13” baking pan. Bake at 350 degrees for 25
30 minutes. Cool in pan.
Cut into squares.
Easy Passover Brownies (Submitted by Maxine & Barbara Durst)

4 squares
unsweetened chocolate
½ lb unsalted butter
2 ¼ cup sugar
4 eggs, beaten
1 cup matzo cake meal, sifted
2tsp vanilla
pinch of salt
12 oz pkg chocolate chips
Melt unsweetened chocolate and butter. Add remaining ingredients. Stir in chocolate chips.
Bake in
greased 9×13 in. pan at 350 for 25 min.
