Meatless Mondays: Quick and Easy Vegan Stir Fry

Meatless Monday – November 10th
This past week has been a challenging one. It has been crazy and busy with no real rhyme or reason. I have been home with my family,and usually this means my mom making all our favorite foods, but this trip it meant my sisters and I eating out a lot. Multiple times a day a lot.
Last night we decided that we really needed a night with real homecooked food. My sister, Alexis, is vegan and she more than anyone was ready to eat at home, because it is not always easy for her to find vegan out in our small hometown. Eating in presented its own issues, as the rest of us are not vegan.
I was cooking and normally I rely heavily on having recipes to follow, but this time I was too tired and hungry to really search for anything. I decided to wing it, and just go for a stir fry with veggies and brown rice. I figured that would be pretty hard to mess up. I had not had a stir fry in a long time, but after being reminded how delicious and easy it is to make I will be making it more often I’m sure. All I had to do was follow the directions on the box of rice and saute the vegetables until they were tender.
These are the veggie I used:
Green Beans
Tomato
Onion
Pepper
Once the veggies were done I poured them over the rice and stirred them together.Delicious, easy, quick, and approved by my sister – definitely a keeper!
